Step 1
If the fish is not gutted, cut open the belly and remove the insides. Cut off the head, tail, and fins. Clean off the scales and remove the black membrane from the belly. Rinse the hake thoroughly and pat dry. You can use sour cream of any fat content. Use odorless vegetable oil.
Step 2
Cut the cleaned hake into portion-sized pieces. Salt, add spices or seasoning to taste, and mix well. Let the fish sit for 20 minutes to absorb the flavors.

Peel the onion, rinse, and cut into half rings.

Peel and rinse the carrot. Slice it into thin strips (not grated) to preserve texture after cooking.

In a skillet with some vegetable oil, sauté the onion for 3–4 minutes, stirring.

Add the carrots to the skillet and sauté together on medium heat until soft. Remove the skillet from the heat.

Dredge the hake pieces in flour. You can do this on a plate or in a bag: put flour and fish in the bag, close, and shake until evenly coated.

Heat vegetable oil in a clean skillet. Add the hake pieces and fry on one side until golden brown.

Flip the fish and brown the other side as well.

In a bowl, mix sour cream with warm water until smooth.

Pour the sour cream mixture into the skillet with the vegetables. Mix well. Make sure the skillet isn’t too hot to prevent curdling. Bring to a boil and add salt.

Add the fried hake to the sour cream sauce with vegetables. Cover and simmer on low heat for 5 minutes.

If needed, flip the fish during cooking. Rinse a bay leaf and add it to the skillet. Cook for another 10 minutes.

Serve the hake in sour cream with onions alongside potatoes, rice, or vegetables. Enjoy!
