Advice

You can replace turkey with chicken or any other meat of your choice, but note that cooking time and calorie content will vary. To prevent eye irritation when chopping onions, rinse the onion and knife with cold water. To avoid lingering onion smell, rub your cutting board with a lemon wedge before chopping.

Step 1
If your meat is frozen, defrost it in advance on the bottom shelf of the fridge. However, fresh meat is best for grilling skewers.
Step 2
Remove the skin from the turkey thigh. Rinse the meat under cold running water and pat it dry with paper towels. Cut the turkey into medium-sized chunks and place them in a large bowl. You can use the bone later for making broth.

Peel the onions, rinse them, and slice into rings or half-rings. Add them to the meat. Season with salt and pepper to taste. Add your favorite spices – I used ground paprika. A pre-mixed BBQ seasoning works great too. Just be sure to read the label – many spice mixes already contain salt, so you don’t accidentally over-salt the meat.
Step 4
Squeeze juice from a fresh lemon – use 1 large lemon or 2 medium ones.
Step 5
Mix everything thoroughly, cover the bowl with a lid or plastic wrap, and refrigerate for a few hours. The longer the meat marinates, the more flavorful it becomes. I usually marinate it overnight.

Thread the marinated turkey pieces onto metal skewers.
Step 7
Light the grill. When the coals are covered with a white ash, place the skewers on the grill.
Step 8
Grill the skewers, turning occasionally, until fully cooked. To check for doneness, cut into a piece – if the juice runs clear, your turkey skewers are ready!
