Grilled Skillet Potatoes

A wonderful aromatic side dish for meat, fish, chicken, or vegetables! Using a grill skillet makes everything tastier — those golden stripes make any dish more attractive and appetizing. And it’s just as easy to use as a regular frying pan.

Step 1
Wash the potatoes, then peel them using a vegetable peeler.
Step 2
Place the peeled potatoes into a pot. Fill with water until the potatoes are fully covered. Put the pot on high heat. Once it boils, reduce to medium heat, cover with a lid, and cook until half-done - not fully cooked. Do not add salt during boiling. If needed, salt before frying.

Remove the half-cooked potatoes from the pot and place them on a plate or cutting board. Let them cool for about 10-15 minutes so you don’t burn your hands.
Step 4
After cooling, slice the potatoes lengthwise into 2 or 3 pieces (I cut mine into 3). The number of pieces depends on potato size and desired thickness.
Step 5
Prepare flavored oil: take a small bowl, pour in some vegetable oil, and add your favorite potato spices. Stir well. Note: If your spice mix contains little or no salt, add salt to the oil as well.

Brush the potato pieces with the seasoned oil using a silicone brush, or dip them directly into the oil. Immediately place the oiled pieces onto a preheated grill skillet.
Step 7
Fry the potatoes until golden brown with distinct grill marks. Flip and fry both sides until fully cooked.
Step 8
Serve the grilled potatoes hot, topped with chopped green onions (or any herbs like dill).
