Step 1
Prepare all the ingredients. Choose large, fresh, unfrozen chicken breasts for better juiciness. Use medium-spicy mustard; if using a hotter variety, reduce the amount. Opt for liquid honey or melt it in a water bath. Take the butter out in advance to soften.

Rinse the chicken breasts thoroughly and pat them dry with paper towels. If using frozen meat, thaw it properly. Using a sharp knife, make crosswise cuts in the chicken, not slicing all the way through—deeper cuts in the thick part, shallower in the thin part. Season with salt, pepper, and drizzle with lemon juice.

Prepare the glaze-marinade: place softened butter in a small bowl. If it's still hard, microwave it for 20 seconds (but don’t melt it completely). Add soy sauce, honey, and mustard to the butter.

Mix the marinade well, preferably with a whisk, as it may be difficult to combine.

Brush the chicken breasts with the marinade using a pastry brush. Make sure to coat the cuts first, then the surface. Let the chicken sit for 15-20 minutes. Then, sprinkle breadcrumbs over the pieces.

Preheat the oven. If it has a grill function, set it to convection + grill mode at 200°C (392°F). If not, set it to the highest temperature. Line a baking sheet with foil to catch the juices. Place a wire rack over the sheet and arrange the chicken breasts on top, cut-side up.

Bake for 15-20 minutes until golden brown. The exact cooking time depends on your oven.
