Georgian Walnut and Garlic Sauce

Spicy, aromatic, and flavorful - this Georgian walnut and garlic sauce is a perfect companion to meats, vegetables, kebabs, or even as a salad dressing. It’s simple to make but adds a unique twist to any dish.

Step 1
Use green basil for a more vibrant sauce color, though purple basil also works well in taste. I used a bush basil with small leaves, often sold in large supermarkets. Yogurt of any fat content will work; I used 6%.
Step 2
Toast walnuts lightly in a dry skillet if desired. Then chop them roughly with a knife into smaller pieces.

Peel and roughly chop garlic cloves. You can substitute 1–2 teaspoons of dried garlic. For a milder sauce, you can omit garlic altogether.
Step 4
Add walnuts to a blender and pulse until they’re finely grounded. You can also use an immersion blender.
Step 5
Add rinsed basil and garlic to walnuts. Season with salt and pepper. Blend until smooth. I recommend adding the Georgian spice mix suneli for a truly authentic and aromatic flavor.

Add plain yogurt and blend again until sauce becomes smooth and creamy. It should be medium in thickness. Add more yogurt if you prefer a thinner consistency.
Step 7
The Georgian walnut-garlic sauce is ready. Serve it with roasted or grilled meats, vegetables, or use it as a dressing for fresh or roasted vegetable salads. I served it with fried pork - delicious! Enjoy!
