Step 1
You can use any white bread, including loaf bread or other types of flour-based bread. Even rye bread will work well. I used pre-sliced bread, but you can slice a whole loaf yourself.
Step 2
Preheat the oven to 200°C (about 390°F) right away—while you're preparing everything, it will heat up. Grate the cheese on a coarse grater. You can use any cheese: hard, semi-hard, or soft like mozzarella. The key is that it's tasty, good quality, and melts well.

Transfer the grated cheese into a bowl. Peel the garlic and press it through a garlic press into the cheese. You can also finely chop or grate it. Adjust the amount to your taste—I used one clove, but you can use more.
Step 4
I added chopped fresh herbs—dill and parsley. If you or your family don't like herbs, just skip them.
Step 5
Add mayonnaise to the cheese and mix well. The mixture should be spreadable, but not too runny, or it will slide off the bread when baking. Don’t add salt—cheese and mayo already contain it.

Spread the cheese-mayo mixture onto the bread slices. Don’t overdo it—too much will melt and slide off. Line a baking sheet with parchment paper to avoid sticking and mess. Arrange the topped slices on the sheet.
Step 7
Bake the toasts in the preheated oven for 5–10 minutes, until the cheese melts and turns slightly golden. Serve the hot sandwiches immediately.
Step 8
For a more colorful version, you can top with extras like diced tomatoes, sausage, ham, bell pepper, or cucumbers. I topped mine with sliced tomatoes. Enjoy!
