Step 1
First, prepare all the necessary ingredients. You can use any type of bread based on your taste. Choose your favorite sausages (milk, Vienna, children's, cheese-filled, or smoked sausages all work well). Wash the herbs, mushrooms, and cherry tomatoes under running water and pat them dry with paper towels.
Step 2
Pour hot broth over couscous and let it sit for 5-7 minutes under a tightly closed lid. You can substitute couscous with beans, but if using beans, pre-boil them until fully cooked or use canned.

Chop the mushrooms into small pieces and sauté them with ½ teaspoon of vegetable oil. You can use any vegetable oil, but in this recipe, I use olive oil. Add salt to taste.
Step 4
Add the sautéed mushrooms to the couscous and mix well.

Prepare the cheese spread. Mix cottage cheese with half of the herbs (I used only dill). Add salt and garlic powder, then stir well until smooth.

Slice the bread, lightly drizzle it with olive oil, and toast it using any available method: a toaster or a frying pan. Toasting makes the bread crispy and aromatic. To keep it crispy, let it cool without stacking the slices.
Step 7
Prepare the sausages. First, remove their casing (if they don’t have a natural casing). Use a small knife to lift one end and peel it off in one motion. Then, you can either boil or fry them. Making small cuts on the sausages will create a decorative pattern when cooked. I used a grill pan, which gave them a nice striped pattern.
Step 8
Fry the bacon in a well-heated pan for 3-4 minutes on each side until crispy. You can add halved cherry tomatoes directly to the bacon in the pan. This will allow the tomatoes to soak up the bacon juices, making their flavor more intense. Add the tomatoes 2 minutes before the bacon is done.

Prepare the fried eggs. Heat a pan over low heat and add the remaining olive oil. Once hot, carefully crack the eggs into the pan. Cook over low heat without a lid for about 5 minutes, seasoning with salt to taste. The egg whites should be set while the yolks remain runny and bright.
Step 10
Place the eggs in the center of the plate and arrange the other ingredients around them. Garnish the breakfast with fresh herbs. Enjoy your meal!
