Step 1
Choose a young zucchini so it doesn’t have mature seeds. Mine weighs about 1.3 pounds (600 grams). Use any cheese you like. For herbs, dill, parsley, or green onions work well.
Step 2
Wash the zucchini thoroughly under running water. Slice it into ½–¾ inch (1.5–2 cm) thick rounds.

Heat a pan with a bit of vegetable oil. Add the zucchini slices and fry them on medium-low heat for about 3–4 minutes per side until they start to soften.
Step 4
For the cheese filling, grate the cheese using a fine grater.
Step 5
Mix the grated cheese with chopped herbs and mayonnaise. Press in a couple of garlic cloves. Stir everything together.

Lightly sprinkle the zucchini with salt and spices. You can add ground pepper and dried herbs like basil.
Step 7
The zucchini should be soft but not falling apart. Place them on a paper towel to absorb excess oil.
Step 8
Spread the cheese mixture on top of each zucchini slice and serve. They’re delicious both hot and cold. Garnish with cherry tomatoes and fresh herbs if you like. Enjoy!
