Instead of fresh mushrooms, you can use frozen or dried ones (you’ll need 5–6 times less dried mushrooms). Defrost frozen mushrooms using your preferred method (for example, in the microwave using the correct setting – check your appliance’s manual) and drain the liquid. Or, if the exact liquid amount isn't critical, use them without defrosting. Dried mushrooms must be rinsed thoroughly, as they aren’t washed before drying, and then soaked in cold water for at least 2–3 hours.

Step 1
You can use any mushrooms, but porcini mushrooms are the most flavorful and aromatic.
Step 2
Ideally, pick mushrooms yourself in the forest to ensure they come from a clean environment. If not, store-bought mushrooms are fine.

Scrape off any dirt from the mushrooms with a knife. Remove any wormy parts. Cut the mushrooms into large pieces – they’ll shrink during cooking. Rinse them several times in water.
Step 4
Boil the mushrooms in water for 20–30 minutes. Skim off the foam – this removes any dirt and tiny insects missed during cleaning. Drain and rinse them once more. Now the mushrooms are ready to use or freeze.
Step 5
In a soup pot, pour in clean water and add the boiled mushrooms. Bring to a boil.

Add chopped potatoes and cook for 10–12 minutes.

Peel and rinse the onion. Dice it finely. Heat vegetable oil in a pan and sauté the onion for 3–4 minutes until golden.
Step 8
Add the sautéed onion to the soup. Season with salt and freshly ground pepper. Avoid extra spices to preserve the mushrooms' natural aroma. Simmer for another 5–7 minutes.
