Step 1
Use low-fat cottage cheese (1–5%). Choose dry curd; soft ones won’t hold shape. You may need more flour depending on the cheese’s moisture. A ripe banana works best for flavor.
Step 2
In a deep bowl, peel and break the banana into pieces. Mash it with a fork until smooth. Add one egg and a pinch of salt. Mix until uniform.

Add cottage cheese and mash everything together with a fork. If it’s too grainy, blend or strain it.

Add the rice flour and mix the batter. If it's too runny or soft, add a bit more flour. The dough should be thick enough to shape.

Pour flour onto a board for coating. You can use corn flour for brighter color. Scoop dough with a spoon and shape into a patty. Coat with flour. To shape them evenly, press with an upside-down glass. They may spread due to banana.

Preheat a pan on medium heat. Lightly oil it and place the patties in.

Fry until golden on one side, flip, and cook the other. The banana-rice dough is delicate, so the shapes may not hold perfectly, but taste remains great.
