Step 1
Choose long-grain rice for fluffy pilaf – short-grain rice becomes sticky like porridge. You can use turkey, beef, or pork instead of chicken. I used boneless chicken thighs.
Step 2
Peel and rinse the onion, then dice it. Turn on the “Fry” mode on your multicooker, add a bit of vegetable oil (with a high smoke point), and sauté the onion until golden. If your multicooker doesn’t have a "Fry" mode, use the "Steam" setting – that’s what I use.

Peel and rinse the carrot, cut it into sticks, and add it to the onion. Sauté everything together for a couple of minutes.
Step 4
Rinse and pat dry the chicken, cut it into small pieces, add it to the vegetables, and cook for a few more minutes.
Step 5
Rinse the rice several times until the water runs clear. Add the rice to the multicooker, season with salt, turmeric, and your favorite spices. Rinse a whole garlic bulb and push it into the center of the rice.

Pour in water using a 2:1 ratio (2 cups water per 1 cup rice). Close the lid and set the multicooker to the “Pilaf” or “Rice” mode for about 40 minutes. Time may vary depending on your appliance. When it’s done, open the lid, remove the garlic, and stir the pilaf. Enjoy your meal!
