Step 1
Prepare all the necessary ingredients. You can use any chicken meat, but chicken breast is the easiest option. For a richer broth, I also used chicken bones.
Step 2
If necessary, remove the skin. Rinse the meat and cut it into portion-sized pieces.

Place the meat in a pot, pour in water, and bring it to a boil over high heat. Once boiling, skim off the foam, reduce the heat to medium, and simmer for about 30 minutes.
Step 4
While the broth is cooking, prepare the vegetables. Peel the onion, carrot, and potato. Dice the onion into small cubes and grate the carrot using a coarse grater. Heat a pan with vegetable oil and sauté the onion. Once it turns translucent, add the carrot. Fry until golden and soft, stirring occasionally to prevent burning. Over-fried vegetables won’t look appealing in the soup.
Step 5
Cut the potatoes into cubes and add them to the broth. Cook for 7-10 minutes after boiling. Once the potatoes are soft, transfer the sautéed vegetables into the soup and let it cook for another 2-3 minutes.

Crack the eggs into a deep bowl and whisk them with a fork until smooth. When the soup has simmered long enough with the sautéed vegetables, add the vermicelli. Stir well to prevent the pasta from sticking together. Slowly pour the beaten eggs into the boiling soup in a thin stream, stirring immediately with a fork to create delicate egg ribbons, giving the soup its curly texture. Season with salt and black pepper to taste.
Step 7
Simmer the soup for another 2-3 minutes. Meanwhile, wash, dry, and finely chop the dill. Add it to the soup and remove it from the heat. Cover the pot with a lid and let the soup sit for 5-10 minutes before serving. Enjoy your meal!
