Step 1
First, prepare the ingredients. You can customize the veggie mix – feel free to add croutons, onion, or your favorites. Use any vegetable oil, preferably unrefined and aromatic – sunflower oil works well.
Step 2
Wash the cucumbers and slice them into thin rounds. It’s quicker and easier with a mandoline slicer, but a regular knife will do. If the cucumbers have thick skin, peel them. If they’re overripe with large, hard seeds, remove those too.

Rinse the dill, pat it dry, and finely chop. You may substitute or mix with parsley, green onion, mint, spinach, or wild garlic.
Step 4
In a bowl, combine the cucumbers, chopped dill, and pressed garlic cloves. Two large cloves are enough if the garlic is young and strong. Use 3 if it’s milder.
Step 5
Drizzle with oil, add salt, and mix well. Let it sit for 5 minutes to absorb flavor. Add spices to taste – options like khmeli-suneli, blue fenugreek, or ground coriander give it a nice twist.
