So tender they just melt in your mouth – absolutely delicious! Crepes are thin pancakes filled with cottage cheese and baked in the oven with butter and sour cream. The crepes are made with starch, which makes them thin yet very strong.

Step 1
Prepare the ingredients for the crepes. You can use milk of any fat content. Starch can be either potato or corn. Adjust the amount of sugar and salt to your taste. Use refined, odorless oil. Take eggs and milk out of the fridge in advance – warm ingredients will help the batter mix faster and smoother.

Crack the eggs into a bowl, add sugar and salt, and whisk.

Pour in the milk and mix. Then add the vegetable oil – it will prevent the crepes from sticking to the pan.

Add starch to the bowl and whisk until no lumps remain.
Step 5
Let the batter rest for 15 minutes. Then stir it again to lift the starch from the bottom. The batter will be very thin – that's how it should be.

Heat a crepe pan over high heat. Grease it with a drop of vegetable oil. You only need to grease it before the first crepe, as the oil in the batter will do the rest. However, depending on your pan, adjust as needed. Pour half a ladle of batter into the pan and spread it in a circular motion.

Cook the crepe until golden on one side, then flip it over. If flipping is difficult, add a bit more starch to the batter. Place the cooked crepe on a plate. Continue cooking all the crepes, stirring the batter before each one to lift the starch from the bottom. I got 8 crepes.
Step 8
Prepare the filling. Use good-quality, soft cottage cheese. If it's grainy, blend it for a smoother texture. Use any dried fruits – I have dried cherries. Adjust sugar to your taste, and you can also add vanilla.

Put the cottage cheese in a bowl. If it's grainy, blend it. Add sugar, a pinch of salt (to balance the flavor), and dried fruits. Mix well.

Add an egg to the cottage cheese and mix thoroughly.

Cut each crepe in half. Place a spoonful of filling in the center of each half and roll it into a tube or envelope shape. You can also use whole crepes, but you'll have fewer, thicker ones.

Now, it's time to bake the crepes. You'll need butter and sour cream. Melt the butter in any convenient way. Preheat the oven to 180°C (350°F).

Take a suitable baking dish – mine is 20x12 cm. Grease it with melted butter.

Place the stuffed crepes in a single layer in the dish. Brush them with butter, then with sour cream.

Add another layer of crepes and also brush with butter and sour cream.

Bake the crepes in the oven at 180°C (350°F) for 20-25 minutes, until lightly golden. The exact time depends on your oven.
