Step 1
First, prepare all the ingredients. Be sure to use natural cottage cheese without milk fat substitutes, not too liquid, and firm enough. I prefer 5% fat cottage cheese, but you can also use 9% fat. For frying, I chose olive oil, but you can use any oil of your choice (butter, ghee, regular vegetable oil, or coconut oil).
Step 2
Wash the spinach thoroughly under running water and pat it dry with paper towels. Blend the spinach with one egg using a blender.

The mixture should be bright green and smooth.
Step 4
Add the cottage cheese to the spinach mixture and blend lightly. If you don’t have a blender, you can use a fork, but the texture will be less uniform, and small pieces of cottage cheese may remain.
Step 5
Grate the hard cheese on a fine grater. Add flour, grated cheese, and salt to the cottage cheese-spinach mixture. Mix well until smooth. You may need a little more or less flour, depending on the consistency. The dough should be firm enough to hold its shape while cooking.

Lightly sprinkle a cutting board with flour. Form pancakes using a glass: take a small portion of the mixture, roll it into a ball, place it on the floured board, cover it with a glass, and make a few quick circular motions. Then, press the pancake slightly with the bottom of the glass to shape it like a small disk.
Step 7
Use a silicone brush to lightly grease a preheated pan with oil. Fry the pancakes over medium heat for 3–4 minutes with the lid on.
Step 8
Flip the pancakes and cook for another 3–4 minutes until golden brown.
