Cottage Cheese from Kefir and Sour Cream in a Slow Cooker

Since the degree of saltiness, sweetness, bitterness, spiciness, and acidity is individual for everyone, always add spices, herbs, and seasonings according to your taste! If you are using a spice for the first time, note that some spices, like chili pepper, should be used carefully to avoid overpowering the dish.

Step 1
Prepare the ingredients. Use kefir with a high fat content, also use fatty sour cream, fresh dill, salt, and ground black pepper.
Step 2
Pour the entire kefir into the slow cooker bowl. You can make a larger amount if desired. From one liter of kefir, you will get approximately 300g of cottage cheese.

Step 3
Add sour cream, salt, and ground black pepper to the slow cooker bowl. If desired, you can add your favorite spices – such as Khmeli-Suneli (a spice blend).
Step 4
Place the bowl into the slow cooker. Close the lid tightly and seal the valve. Set the “porridge” mode for 20 minutes. The time is approximate, as it depends on the specific model of your slow cooker. Follow the instructions for your appliance.
Step 5
Meanwhile, wash the fresh dill, dry it, and finely chop it with a sharp knife. You can use any herbs you like.

Step 6
After the indicated time, release the steam and remove the bowl. During the cooking process, the whey should have separated from the kefir.
Step 7
Prepare a bowl with a strainer and line it with cheesecloth. Pour the contents of the slow cooker into the strainer.
Step 8
Let the cottage cheese drain for about 15 minutes to remove excess liquid. If you prefer drier cottage cheese, let it drain longer. You can use the whey for baking, making pancakes, or fritters.

Step 9
Add the chopped dill to the homemade cottage cheese and mix well.
Step 10
Be sure to taste and add any necessary spices. You can also add garlic – it’s a matter of preference, but it tastes very good.
Step 11
Serve the homemade salty cottage cheese with dill and pepper, chilled, for lunch or breakfast. Enjoy!
