Step 1
Choose high-quality, natural cottage cheese without vegetable fats. Any fat content will work. Fattier cottage cheese will be tastier but higher in calories. The same applies to sour cream. Adjust the sugar amount to your taste. You can use any kind of starch; if using cornstarch, use a bit more.
Step 2
Wash, dry, and separate the eggs into whites and yolks. Make sure no yolk gets into the whites, or they won't whip properly. Place the bowl with egg whites in the fridge for now.

In the bowl with yolks, add the cottage cheese, sour cream, sugar, vanilla, and starch.

Blend everything with an immersion blender until smooth and thick like sour cream. Don't skip this step—blending makes the casserole even more tender.

Add a pinch of salt to the egg whites—it helps them whip faster and enriches the flavor. Beat the whites with a mixer on high speed until stiff peaks form that don’t collapse.

Gently fold the whipped egg whites into the cottage cheese mixture in several stages. Use a spatula and fold from the bottom up with a scooping motion after each addition.
Step 7
The result should be a fluffy batter of medium thickness. Don’t overmix, or you’ll lose the airy texture. At the end, you can add raisins or other dried fruits. Coconut flakes also give a nice flavor.
Step 8
Take a baking dish and lightly grease it with a drop of vegetable oil. Pour the batter into the form. My dish was 13×7 inches (33×17 cm).

Place the casserole in a preheated oven at 350°F (180°C). Bake for 35–45 minutes until golden. The exact time depends on your oven and dish size. Mine baked for 40 minutes. Right after baking, the casserole will be tall but will sink slightly—this is normal.
