Step 1
First, gather all the necessary ingredients. You can use any type of cottage cheese; I used 5% fat. Use refined oil with no scent.

Beat the eggs with sugar using a whisk. Be sure to wash the eggs under running water, as harmful bacteria can be present on the shells.

Add the cottage cheese and mix well. If you want a smoother dough, you can pass the cottage cheese through a sieve or blend it with a blender.

Then add the flour, semolina, vanilla sugar, and baking powder, and mix everything thoroughly. You can replace the vanilla sugar with vanillin.

Let the dough sit at room temperature for 15 minutes.

Form small balls from the dough, about the size of a walnut.

In a saucepan or a small pot with a thick bottom, heat the vegetable oil. How to know if the oil is ready for frying? Dip a wooden skewer into the oil. If bubbles form around it, the oil is ready for frying. If the oil bubbles too much, it’s too hot and the balls will burn. Place the balls into the oil and fry for 2-3 minutes on medium heat until golden brown. Then flip and fry for another 2-3 minutes.

Remove the fried balls from the oil and place them on a paper towel to absorb excess oil.
