Step 1
Prepare all ingredients. You can use cottage cheese of any fat content, but I recommend 5% fat as it works well for dough. Choose high-quality, smooth cottage cheese without plant additives. I use Suluguni cheese in this recipe, but you can substitute it with Mozzarella.
Step 2
Transfer the cottage cheese to a bowl and add one whole egg and one egg white. Set the yolk aside for brushing the bagels later. Mix well. Preheat the oven to 180°C (356°F).

Grate the cheese and add it to the cottage cheese mixture. Add salt to taste, keeping in mind that Suluguni is already salty. Mix well.
Step 4
Add rice flour and baking powder, then mix everything until the dough is smooth and even.
Step 5
Divide the dough into six equal portions. Using slightly damp hands, roll each piece into a ball, then flatten it slightly. Make a hole in the center using your thumb. Make the hole a bit larger than needed, as it will shrink during baking.

Place the shaped bagels on a baking sheet lined with parchment paper or a silicone mat. Brush each bagel with the egg yolk and sprinkle with sesame seeds. Bake for 20-25 minutes, depending on your oven.

Let the cottage cheese bagels cool before serving. They make a great alternative to bread or buns. I like to cut them in half and serve with chicken, greens, tomatoes, or cream cheese. Enjoy your meal!
