Chum Salmon with Homemade Salt Brine

This aromatic, tender appetizer will drive everyone crazy! Chum salmon salted at home using a method popular in the Far East. It turns out incredibly delicious. Serve it sliced thinly on a festive table or for a hearty breakfast!

Step 1
It's best to use fresh fish, one that hasn’t been frozen. This way, you’ll get a very tasty and incredibly tender finished fish. If you have a whole fish, gut it, scale it, and fillet it. I used fresh fillets of chum salmon.
Step 2
Prepare the salt mixture. Rinse a bunch of dill under running water, dry it, and chop finely. Place the herbs in a small container. Add salt, sugar, and ground black pepper.

Pour in some vodka and mix everything well.
Step 4
Rinse the fish fillet and pat it dry with paper towels to remove any excess water. Place the fillet on a wide tray or plate. Spread the dill, vodka, and spice mixture evenly over the surface.

Gently rub the salt mixture over the entire surface of the chum salmon.

Wrap the fish in plastic wrap and refrigerate. Let it salt for three days.
Step 7
After the specified time, you can take your first taste.
Step 8
Slice the salted fish fillet into thin slices and serve. It’s very tasty for sandwiches with herbs, vegetables, and fish for breakfast.
