Step 1
Use high-quality all-purpose flour. The eggs should be large. Choose dark chocolate with at least 70% cocoa content.

In a saucepan over low heat, melt the broken chocolate and butter together. Let the mixture cool to room temperature.

Beat the eggs with the sugar and vanilla sugar until the mixture becomes fluffy and smooth. The sugar must fully dissolve, or it will sink to the bottom and affect the rise during baking.

Add the cooled chocolate-butter mixture to the beaten eggs and mix until smooth.

Sift the flour into the batter and mix at low speed with a mixer until uniform. The batter should be medium-thick and pourable.

Pour the batter into a parchment-lined and greased baking pan (approx. 11x8 inches) and spread evenly. Baking time will vary depending on the pan size. Bake in a preheated oven at 350°F (175°C) for 30–40 minutes.

Let the baked brownie base cool completely at room temperature in the pan.

While cooling, prepare the chocolate glaze. You can use richer cream, but you may need slightly more.

In a saucepan, combine broken dark chocolate and cream. Melt over low heat or in a water bath, stirring until smooth. You can use bittersweet chocolate and add a bit of sugar if desired.

Without removing the base from the pan, pour the warm glaze on top and allow it to set.
