Step 1
Use fresh chicken fillet. I used dry chicken spices, but you can use any you like. Try mayonnaise first, then experiment with sour cream or yogurt. Choose wooden skewers long enough to rest on the edges of your baking dish.

Soak the wooden skewers in a deep bowl or baking dish filled with water. This helps prevent the meat from sticking to the skewers.

Rinse the chicken under cold water and pat dry with paper towels. Cut the meat into large chunks, about 1.2 inches (3 cm) by 1.2 inches.

In a deep bowl, mix mayonnaise, mustard, dry spices, a little salt, and black pepper. Taste and adjust the seasoning. Add the chicken pieces and mix well. Let it marinate at room temperature for at least 30 minutes—the longer it marinates, the juicier the skewers will be.
Step 5
Preheat the oven to 390°F (200°C) using the top and bottom convection setting—this is key for a good result. Thread the marinated chicken onto the soaked skewers. Add water to the baking dish (or leave the water the skewers soaked in), and place the skewers across the dish’s edges. Bake for 15–20 minutes.

Remove the skewers from the oven, place on a serving plate, and serve immediately. They’re best hot, while still juicy and flavorful.
