Advice

You can adjust the cherry-to-vodka ratio. More cherries create a stronger, richer flavor, while fewer make a lighter infusion. Don’t discard the cherries – they can be reused for another batch or as cake filling. You can make infusions from almost any fruit or berry, with sugar adjusted based on sweetness.

Step 1
If you're unsure about the taste, make a small batch first. You can scale the recipe later using a calculator. Use ripe, sweet cherries. More sugar makes it closer to a liqueur.
Step 2
Wash the cherries and place them in a clean jar. You can use them with or without pits – pit-in cherries add tartness and shorten the infusion time. Lightly crush if desired, but vodka will naturally draw out color and flavor during steeping.

Sprinkle sugar over the cherries in the jar.
Step 4
Pour high-quality vodka over the cherries to fully cover them. Seal the jar, shake gently to help dissolve the sugar, and place it in a dark place for at least 3 weeks. Shake occasionally if cherries have pits.
Step 5
If using cherries with pits, remove them after 3 weeks and strain the infusion into a clean container. If using pitted cherries, steeping can last 3–6 weeks. This is safer and gives a deeper flavor.

Strain the finished cherry vodka infusion and pour into a bottle or decanter. Store in a dark place.
Step 7
Chill in the fridge for a few hours before serving. Note: The infusion is strong (around 40% ABV / 80 proof), so enjoy in moderation. Cheers!
