Step 1
You can use any chicken parts instead of legs. If using frozen meat, thaw it in advance. Choose natural, high-quality cheese without vegetable fats—it melts and tastes better in soup.

First, prepare the croutons. Any white bread will do. Cut it into small cubes.

Spread the bread cubes on a baking sheet. Place it in a preheated oven at 340°F (170°C) for 10–15 minutes. Dry until golden. If they brown earlier, remove them.

Pour cold water over the chicken legs in a pot. Place over medium heat. Bring to a boil, skim off foam, then reduce heat to low. Add salt and whole peppercorns. Cover and simmer for 40–60 minutes, depending on the chicken parts.

Peel and dice the onion.

Peel and coarsely grate the carrot.

Peel and cut the potatoes into small cubes.

While the broth is simmering, prepare the sauté: Heat oil in a pan over medium heat. Add onions and carrots. Sauté, stirring occasionally, for about 5 minutes over low heat.

Once the chicken is done, remove it from the broth. Add potatoes and the sautéed vegetables to the pot. Cook for another 15 minutes, until potatoes are soft—they should break easily with a spoon.

When the potatoes are ready, add grated or diced cheese and boneless, chopped chicken back into the soup. Simmer until the cheese fully melts, about 5 minutes. Boil for 1 more minute, then turn off the heat, cover the pot, and let it sit for 10–15 minutes.
