A delicious, healthy, and quick breakfast for every day! These cheese waffles are perfect for those following a healthy lifestyle. You can use almost any kind of cheese, and substitute rice flour with oat flour. Serve them on their own or with red fish and keto-friendly toppings.

Step 1
ou can replace rice flour with any gluten-free option: oat, corn, etc. Regular flour can be used instead of whole wheat, but keep in mind the quantity may vary depending on the type.
Step 2
Grate the cheese on a fine grater. You can use any cheese – hard or semi-hard – as long as it is tasty, high-quality, and melts well without vegetable fat substitutes.

Wash the dill, shake off the water, and chop finely. You can replace or mix it with other herbs like parsley, green onions, or a mixed herb blend.
Step 4
In a bowl, mix the egg, kefir, and both types of flour. Whisk until the batter is smooth and uniform.

Add grated cheese, chopped herbs, salt, and pepper into the batter.

Mix again until smooth. The batter should be thick but slightly pourable. If it’s too runny (like for pancakes), add a little more flour. If too thick, add a bit more kefir.
Step 7
Preheat the electric waffle maker. Pour in a bit of batter and cook the cheese waffles for 3–5 minutes until golden. If they stick, lightly oil the plates before each waffle. I didn’t need to use oil. You can also use a multi-baker.
Step 8
Place the ready cheese waffles on a plate and serve. Enjoy!
