Step 1
Prepare the ingredients. Choose a good quality, natural cheese, without milk fat substitutes. It should melt well and quickly. Any red fish will work, I used trout. You can use dill along with or instead of parsley.

First, cut the fish into very thin slices. To make it easier, put it in the freezer for 30-40 minutes.

Grate the cheese on a coarse grater.
Step 4
Place the cheese in a deep bowl (preferably stainless steel or glass).
Step 5
Boil some water in a pot. There should be enough water so that when you place the bowl with cheese on top, it touches the water. Put the bowl on top of the pot. Stir the cheese with a spatula until it melts completely (it will become a soft, homogeneous mass).

Take a large board and cover it with plastic wrap. Spread the melted cheese onto the board. Cover the cheese with another layer of plastic wrap.

Use a rolling pin to roll the cheese into a layer about 3mm thick.
Step 8
Remove the top layer of plastic wrap. Lay the fish on top of the cheese in one even layer. Leave a couple of centimeters on one side to make it easier to roll.

Place parsley leaves on top of the fish.

Carefully roll the cheese into a roll, using the plastic wrap to help. Wrap it tightly in plastic wrap and refrigerate the roll on the board for at least 2 hours (I kept mine overnight).

Once the roll is set, remove the plastic wrap. Slice the roll into round pieces. Discard the uneven and empty ends.
