You can use not only mayonnaise as a dressing but also sour cream or natural yogurt. They can be used alone or mixed with mayo in any proportion to your taste – this will reduce the calorie content of the dish.

Step 1
The celery root should be firm, undamaged, and without signs of rot. The apple should also be fresh, preferably with a sweet-and-sour taste. To soften the salad’s flavor, you can add boiled eggs, and for a sharper taste, a bit of green onion. You may also add other vegetables or meats as you like.
Step 2
Wash the celery root, pat it dry, and peel the tough skin. Then slice it into very thin, short strips. You can also grate it on a coarse grater for speed, but slicing preserves the vegetable’s crispness and juiciness for longer.

Slice the apple into thin strips, just like the celery root. Since apples brown quickly, prepare a bowl with cold water and add 1 tablespoon of 6% vinegar. Place each sliced portion of apple in the water, fully submerging it. If you grated the celery root, the apple should also be grated to keep the salad texture consistent.
Step 4
Once all the apple is cut, remove it from the water and quickly pat dry with a paper towel. Add the apple strips to the sliced celery root.
Step 5
Add mayonnaise to the bowl and mix thoroughly. Let the salad sit for about 5 minutes. If you don't like or can't eat mayonnaise, use sour cream or natural yogurt. For a vegan option, mix vegetable oil, soy sauce, mustard, lemon juice, and sugar – it's also delicious.
