Step 1
Choose juicy, sweet, and large carrots. You can use either pre-shelled nuts or whole nuts and peel them yourself. Any fat-content sour cream will work; you can also use plain natural yogurt without additives.
Step 2
Thoroughly wash the carrots under running water, ideally using a brush to remove all dirt. Peel them with a vegetable peeler and trim the ends. Grate the carrots using a coarse or medium grater. Place the grated carrots into a salad bowl.

Chop the nuts by any method: use a knife on a board, a blender, or crush them in a mortar like I did. You can adjust the size of the nut pieces – make them very fine or leave larger bits. To enhance their aroma, lightly toast the nuts in a dry skillet beforehand.
Step 4
Add the chopped nuts to the carrots in the bowl. Peel a clove of garlic and crush it through a press or finely chop it. If you like spicier food, increase the amount of garlic.
Step 5
Prepare the sour cream dressing. In a small bowl, mix sour cream with sugar and salt. Add a little lemon juice; alternatively, you can use apple cider vinegar. Stir well and pour the dressing over the carrots and nuts.
