Step 1
You can use either red or white canned fish – whichever you prefer. I used sardines in oil. Shake the can before buying — if it feels watery, there's likely less fish inside.
Step 2
Remove the fish from the can, drain the oil, and break it into chunks or mash with a fork. If you see large bones, remove them.

Sort and rinse the millet under cold water until the water runs clear.
Step 4
Wash, peel, and cut the potatoes into medium-sized cubes.

Peel and slice the carrots into half-moons.

Peel the onion and cut it into medium pieces. If you or your kids don’t like onion, you can skip it or just add a whole onion at the start and remove it later. You can also replace red onion with regular yellow onion.
Step 7
Wash, dry, and finely chop the parsley. You may substitute or combine it with other herbs like dill, cilantro, green onion, or a herb mix.
Step 8
Add the rinsed millet and bay leaves to a pot. Pour in 8 cups (2 liters) of clean water. Place the pot over medium heat. Bring to a boil and cook the millet for about 10 minutes. (Check the millet packaging for exact cook time, which averages around 25 minutes.)

While the millet is cooking, heat some vegetable oil in a skillet over medium heat. Add the onions and carrots. Sauté, stirring, for 4–5 minutes until softened.

Transfer the sautéed vegetables to the pot. Then add the potatoes. Continue cooking for about 15 minutes.

Add the canned fish, salt, and pepper to taste. Simmer for another 5 minutes, or until the potatoes and millet are fully cooked.

Stir in the chopped herbs at the end and turn off the heat.
