Simple, fresh, and crispy - perfect for celebrations or daily meals! This cabbage, crab stick, and cucumber salad is a favorite appetizer that even a beginner can make with ease. Chinese cabbage adds extra freshness and juiciness, but regular white cabbage works too.

Step 1
Boil the eggs in advance and let them cool. If the crab sticks were frozen, thaw them. Drain the corn in a sieve to remove excess liquid. You can use white or Chinese cabbage. For regular cabbage, choose a young one with tender leaves.

Remove the plastic film from the crab sticks. Cut them into small cubes, about the size of the corn kernels. This keeps the salad neat and visually appealing.

Dice the cucumbers as well. Make sure to taste them - if they’re bitter, they can ruin the salad.

How to hard-boil eggs: place them in cold water and bring to a boil over low heat. Boil for 9 minutes after boiling starts. Then rinse in cold water to cool - the shell will peel more easily due to the temperature contrast. Peel and dice the cooled eggs.

Combine all chopped ingredients in a large bowl. Add the drained corn.

Shred the cabbage into short thin strips. If using Chinese cabbage, slice the green leafy part. If your cabbage is a bit tough, knead it gently with your hands to soften.

Add the shredded cabbage to the bowl with the rest of the ingredients.

Dress the salad with mayonnaise - store-bought or homemade. Alternatively, you can use sour cream, or a mix of sour cream and mayo, or sour cream and mustard. Add salt to taste, keeping in mind the crab sticks and dressing may already be salty. Mix everything well and serve immediately. If you're planning to serve it later, refrigerate without dressing to prevent the vegetables from releasing too much juice.
