Cabbage Rolls with Sour Cream

Appetizing and incredibly delicious with a fragrant sauce! Cabbage rolls with sour cream are made in a pot using two types of meat: chicken and pork. This combination creates an extra juicy and tender filling. Paired with soft cabbage and creamy sauce, it’s a true culinary delight.

Step 1
I cook them in a pot, but this dish can also be made in a Dutch oven or even baked in the oven. You may use store-bought ground meat.
Step 2
Wash the cabbage head, remove damaged outer leaves. You can trim the core now or leave it for easier handling. In a large pot, boil water and place the whole cabbage inside. Cook until the leaves separate easily. Carefully remove as many leaves as possible.

Prepare the filling: cut the chicken and pork into chunks and grind them using a meat grinder or blender.

Rinse the rice until the water runs clear. Boil it in salted water until fully or half cooked—just make sure it's fluffy. Drain and let it cool.

Peel and finely dice the onion.

In a bowl, combine ground chicken and pork, rice, onion, salt, and pepper. Mix thoroughly. You can add any spices to taste.

Trim the thick stems from the base of each cabbage leaf. Place some filling at the edge of a leaf, fold the sides in, and roll into a neat parcel. Repeat with the rest.

Prepare the sour cream sauce. You can use any fat content of sour cream.

Mix sour cream with water or broth, add salt and pepper, and stir until smooth.

Dice the remaining onion.

Peel and grate the carrot on a coarse grater.

Heat vegetable oil in a skillet. Sauté the onion and carrot for 5–7 minutes, stirring, until soft.

Place the cabbage rolls in a deep pot. Spread the sautéed vegetables over the top.

Pour the sour cream mixture over everything. Add a bay leaf.

Cover and simmer over medium heat for about 1 hour until fully cooked. If it boils too hard, reduce heat and cook a bit longer.
