Step 1
For the filling, use any herbs you have. I use dill, parsley, sorrel, and green onions. You can also add spinach, arugula, basil, etc. Use two types of cheese – I used Gouda and Suluguni.
Step 2
To make the yeast dough, warm water to about 95–98°F (35–37°C). Pour it into a bowl, add dry yeast, salt, and sugar.

Then add vegetable oil, gradually mix in sifted flour, and knead the dough. You might need a bit more or less flour depending on consistency.
Step 4
The dough should be soft, elastic, and tender. Cover with a towel and let it rise in a warm place for 1 hour.

Meanwhile, prepare the filling. Wash and dry the fresh herbs thoroughly. Chop them finely and place into a bowl.

Grate both types of cheese into the same bowl. If needed, add a little extra salt to taste.

Mix all filling ingredients well.

Punch down the risen dough and place it on a lightly floured surface.

Divide the dough into 10 parts. Flatten each piece into a small round. Add a spoonful of filling and seal the dough to form a bun. Pack the filling tightly – it shrinks while baking.
Step 10
Place the buns on a parchment-lined baking sheet. Let rest for 10 minutes. Brush with egg yolk and optionally sprinkle with sesame seeds. Bake at 350°F (180°C) for 20–30 minutes. Adjust baking time as needed based on your oven.
Step 11
The buns will rise and turn golden. Remove, cover with a towel, and let them rest – this will keep them soft and tender. Enjoy!
