Borscht in a Multicooker with Pork

Very rich, vibrant, and insanely delicious – yet so simple! Making borscht with pork in a multicooker is even easier than on the stovetop, and you’ll use fewer dishes. Add fresh garlic or herbs for extra aroma, and adjust the thickness of the soup to your liking.

Step 1
Peel and rinse the vegetables in advance. Choose boneless pork. You can substitute it with beef or chicken if desired.
Step 2
Set your multicooker to the “Fry” or “Sauté” mode. Pour in a bit of vegetable oil. Cut the pork into small pieces and place it in the hot bowl. Fry for 12–15 minutes until it starts browning.

Step 3
While the pork is cooking, prepare the vegetables: finely chop the onion, grate the carrot on a coarse grater, and cut the tomato and bell pepper into small cubes.
Step 4
Add all the chopped vegetables to the bowl with the meat.
Step 5
Then add the grated beetroot. Mix everything well and continue frying with the meat for another 15 minutes.

Step 6
Meanwhile, finely shred the cabbage and cut the peeled potatoes into pieces.
Step 7
Switch the multicooker to the “Stew” mode for 1 hour. Add the cabbage and potatoes to the bowl. Pour in hot water until all ingredients are covered. Add salt and spices to taste. You can add a bay leaf for extra aroma. Close the lid and let it cook.
Step 8
After an hour, the multicooker will signal that the dish is ready. Pour the borscht into bowls and serve hot. Optionally, add a spoonful of sour cream. Enjoy!
