Enjoy your meal! For best results, use fresh beef instead of frozen—frozen meat can turn out dry. To prevent eye irritation while chopping onions, rinse the onion and knife under cold water. Rub your cutting board with a slice of lemon to prevent onion smell from absorbing.

Step 1
Prepare all the listed ingredients. For juicy and tender shashlik, use fresh (never frozen) beef tenderloin. Rinse the meat, pat dry with a kitchen towel, and trim off any membranes or sinews.

Peel the onions and rinse them under cold water. Rinse and pat dry the fresh herbs. Cilantro, parsley, or basil work great for marinating shashlik.

Cut the beef into small, even pieces. Place them in a large bowl.

Sprinkle the beef with ground paprika. Finely chop basil leaves and rub them between your hands to release juices. Add them to the bowl.

Cut the onion into thick rings or half-rings. Lightly crush the rings with your hands and add to the meat. Season with black or allspice. You can also add oregano, thyme, or a pre-made shashlik spice mix (optional).

Pour in a small amount of red wine.

Mix everything thoroughly. Cover the bowl with plastic wrap and let it sit at room temperature for 30–40 minutes. You can also refrigerate it for longer marination.

Salt the marinated beef to taste and skewer the meat.

Light the grill. Once the flames die down and the coals are covered in white ash, start grilling. Place skewers over the coals, turning them regularly until done. Cooking time depends on heat and chunk size. Check doneness by cutting a piece—if the juice runs clear, it's ready.
