Step 1
Prepare all necessary ingredients. Fresh broccoli is the best choice, as it should be bright green and firm to the touch. However, frozen broccoli works too. If using frozen, thaw it, drain any excess liquid, and pat it dry. Use large eggs. You can use any flour: rice, corn, or buckwheat flour will give the dish a new flavor. I used wheat flour.
Step 2
Wash the broccoli thoroughly. The florets are small, so wash them with hot water, or better yet, use a special vegetable brush and cleaner. Cut off the stem and separate the florets, making sure they aren’t too large so the batter can cook through.

Step 3
Wash the egg thoroughly to remove any bacteria from the shell. Crack the eggs into a bowl and whisk them with a fork.
Step 4
Sift the flour and salt into a separate bowl. Sifting is important to make the batter fluffier. You can also add your favorite dry herbs or spices at this stage to give the dish a unique flavor. For example, dried garlic, chili powder, paprika, thyme, or rosemary.
Step 5
Heat vegetable oil in a deep pan. You can use any refined vegetable oil, such as corn or olive oil, but it must be refined to avoid smoking or burning.

Step 6
Coat each broccoli floret in flour.
Step 7
Then dip it into the egg mixture.
Step 8
Coat it in flour again.

Step 9
Place the broccoli into the hot oil and cook on low heat, turning occasionally. It will take around 7-10 minutes until the batter turns golden. It’s okay if the broccoli doesn't cook through completely, as raw broccoli is healthiest and just needs a brief cooking time.
Step 10
This crispy broccoli is delicious both hot and cold. Enjoy!
