Step 1
Choose a ripe, soft banana. Aim for a banana weighing around 210 grams (7.4 oz), as too much banana can make the pancakes undercooked. You might need more or less rice flour depending on the batter's consistency.
Step 2
Peel the banana and break it into pieces into a bowl. Mash the pieces with a fork until you get a puree. That’s why very ripe bananas work best—they mash easily. You can also use an immersion blender, but a fork works fine. It’s okay if a few small banana chunks remain—they add texture to the pancakes.

Add an egg to the banana puree, pour in the milk, and add a small pinch of salt. Mix with a fork until smooth.
Step 4
Mix baking powder into the rice flour to distribute it evenly.
Step 5
Begin adding the flour mixture to the banana mass in portions. Stir well with a fork after each addition. Stop when the batter has the consistency of thick sour cream. I used less flour than listed—it depends on banana weight, ripeness, egg size, flour properties, etc.

Preheat a non-stick skillet over medium heat—this is important since you’ll be cooking without oil. Scoop a tablespoon of batter into the center of the skillet and gently spread it to form a pancake about ½ inch (1 cm) thick.
Step 7
Cook the pancake until golden brown on one side (a couple of minutes), then flip to cook the other side.
Step 8
Transfer the finished pancake to a plate. Repeat the process with the remaining batter. I got exactly 6 pancakes from this batch.
