Step 1
Rinse and sort the strawberries, then lay them on a paper towel and let them dry completely. You can use a heat-resistant sugar substitute if desired.

For the dough: In a mixing bowl, pour warm water, crack in the egg, and add fresh yeast, sugar, and salt. Pour in vegetable oil and mix until smooth.

Gradually add sifted flour and knead into a soft, elastic dough. The amount of flour may vary. Sifting helps remove impurities and adds air for fluffier baked goods.

Shape the dough into a ball, place it in a deep bowl, and set in a warm place. Let it rise until doubled or tripled in size.

Dust your work surface with flour, turn out the risen dough, and divide it into equal portions. Shape each into a ball, cover, and let rest for 10 minutes. Preheat the oven to 400°F (200°C).

For the filling: Remove strawberry stems, cut into pieces, and place in a bowl. Add starch and mix.

Roll each dough ball into a flat round. Add the strawberry filling and sprinkle with sugar. Add sugar right before shaping to prevent excess juice from leaking out.

Grease a baking tray or line it with a baking mat. Place the pies spaced apart, cover, and let rise for another 10–15 minutes. Beat an egg with a fork and brush the tops.
