Step 1
I'm using pork, but you can use beef or chicken. Just be mindful that the cooking time may vary. Preheat your oven to 350°F (180°C).
Step 2
Rinse the meat, pat it dry, and cut into small pieces.

Step 3
Marinate the meat in a mixture of soy sauce, mustard, ground black pepper, sunflower oil, and Italian herbs.
Step 4
Cut the eggplant into small cubes.
Step 5
Sauté the eggplant in a skillet with some vegetable oil. You can use raw eggplant in the dish, but frying it first gives a rich, almost mushroom-like flavor.

Step 6
Peel and chop the onion into large wedges.
Step 7
Grease a baking dish with oil. Add the onion first, then layer the marinated meat on top.
Step 8
Thoroughly wash the potatoes, peel them, and cut into sticks. Pre-cook the potatoes until half done—either by boiling for a few minutes or microwaving (covered, without water). This step reduces overall cooking time.

Step 9
In the baking dish (already filled with onions and meat), layer the sautéed eggplant, then the potatoes. Season with salt and pepper. Spread sour cream on top.
Step 10
Grate any hard cheese on a coarse grater.
Step 11
Sprinkle the cheese over the sour cream and cover the dish with aluminum foil. Bake in the preheated oven at 350°F (180°C) for 40–50 minutes. Adjust time based on your oven.

Step 12
Remove from the oven and serve hot. Enjoy your meal!
