Step 1
Sift the flour in advance to aerate it. Sifting makes the dough and baked goods fluffier. For the filling, you can use not only brynza – feta, suluguni, or any cheese you like will work.

In a small bowl, mix warm water, sugar, and yeast. Let it sit for 10–15 minutes to activate the yeast. You should see bubbles forming. If not, use different yeast – the current one won’t work for baking.

Pour the yeast mixture into a large bowl where you’ll prepare the dough.
Step 4
Add vegetable oil, and gradually mix in the sifted flour. Adjust the amount of flour based on dough consistency – you may need slightly more or less than stated.
Step 5
The finished dough should be soft and tender, barely sticking to your hands. Cover the bowl with a towel and let it rest in a warm place for 1–1.5 hours. The dough should rise and double in size.

For the filling, mash the brynza (or other cheese) with a fork.

The dough has risen well.
Step 8
Roll the dough into a circle and cut it into triangular segments. Place a bit of cheese on the wide end of each triangle and roll into a small log.

Line a baking sheet with parchment paper and place the pirozhki on it. Brush each one with egg yolk and sprinkle with sesame seeds. Bake in a preheated oven at 350°F (180°C) for about 20–25 minutes. Adjust time depending on your oven.
Step 10
Once the pirozhki are golden and puffed up, transfer them to a bowl and cover with a towel to steam. This keeps them soft. Enjoy!
