Step 1
Sift the flour in advance to aerate it – this will make the batter fluffier. Use large, tart-sweet apples for the filling.

Start by preparing the filling. Wash and peel the apples. Grate them on a coarse grater. If they release juice, drain it. Drizzle with lemon juice to prevent browning.

Add some sugar - adjust according to the tartness of the apples. Mix everything together.

For the batter, combine eggs and sugar. Beat first at a low speed to dissolve the sugar, then increase to high speed until the mixture is fluffy and pale.

While beating the eggs, line a 12x16 inch (30x40 cm) baking sheet with parchment paper. Lightly grease with vegetable oil if needed. Spread the grated apples evenly over the paper.

The eggs should turn white and foamy. Add baking soda, vanilla, and sifted flour. Gently fold with a whisk by hand to combine.

Pour the batter evenly over the apples. Bake in a preheated oven at 350°F (180°C) for about 10–15 minutes. The sponge will rise slightly and turn golden.

Remove the tray from the oven and carefully flip the roll onto another sheet of parchment paper. Peel off the baking sheet paper. The apples should now be on top.

Roll up the sponge so the apple layer is inside. Wrap it in the same parchment paper and cover with a towel. Let it cool. This keeps the roll from drying out.
