Crispy, airy, and incredibly delicious and aromatic! Almond pastries are a real treat for those with a sweet tooth. If you have leftover egg whites and don’t know what to do with them, make these pastries. The result will pleasantly surprise you—you won’t be able to stop!

Step 1
Use high-grade flour. You can substitute almonds with other nuts: peanuts, hazelnuts, cashews, pistachios, or a mix—but keep in mind the flavor will change. Preheat your oven to 320°F (160°C).
Step 2
Rinse the almonds and dry them in a skillet or oven. Grind them into fine crumbs using a blender. Optionally, peel them: pour boiling water over the almonds, let them sit for 3–5 minutes, peel, dry, and grind.

In a bowl, add powdered sugar and 2 egg whites. Whisk until smooth. You can use regular sugar instead, but it will take longer to dissolve.
Step 4
Add the ground almonds and stir well.
Step 5
Place the bowl over a water bath, ensuring it doesn’t touch the boiling water (to avoid cooking the egg whites). Stir constantly and heat the mixture to 104–113°F (40–45°C). I used a kitchen thermometer. Remove from heat and cool.

Sift the flour into the batter and mix thoroughly. Let it sit for 10 minutes.
Step 7
Add the remaining egg white and mix. The dough will become slightly more liquid.
Step 8
Transfer the dough to a piping bag and snip the tip. You can also use a sturdy plastic bag.

Pipe even round circles (approx. 2 inches or 5 cm in diameter) onto silicone parchment or a baking mat, spacing them well apart. Bake in the preheated oven for 20–25 minutes at 320°F (160°C). Watch to avoid burning underneath. Time may vary.
Step 10
I got 4 trays of cookies. Let the almond pastries cool completely before serving. Enjoy!
