Achik Chuchuk Salad

A salad with just a few ingredients—simple and quick to prepare, yet incredibly delicious. It doesn't need oil or dressing—its flavor comes from the abundant tomato juice. Achik Chuchuk is traditionally served with pilaf, as it aids digestion and helps absorb heavy food. Together, the salad and pilaf offer a rich, balanced flavor.

Step 1
Choose ripe and juicy tomatoes for the salad. The tastier the tomatoes, the better the salad. You can use regular or red onions. It’s best to prepare Achik Chuchuk 15-20 minutes before serving pilaf.
Step 2
Rinse the tomatoes under running water and pat them dry with a towel. Slice the tomatoes thinly.

Step 3
Peel the onions. Slice them into quarter rings. If you're using small onions, cut them into half-rings. Cut both tomatoes and onions directly over the salad bowl—tomato juice is crucial to this dish. Slice both as thinly as possible.
Step 4
Season the salad with salt and freshly ground black pepper. Gently toss everything together. Let the salad sit for 10–15 minutes before serving. It’s perfect alongside hot, fragrant pilaf.
Step 5
Enjoy your meal!
